Production area S. Angelo in Colle, Montalcino (SI) – Hilly lands at an altitude of about 350 above sea level, facing south-west. Weather conditions A warm spring favored an early bud break of about a week. Higher than average temperatures and low rainfall remained until July. The grapes developed small and sparse, and then gained weight with rains in late July-August. An early but well balanced grape ripening was favored by the wide daily temperature ranges. Variety Sangiovese clones selected in old vineyards in Montalcino. Harvest Thorough selection of the healthier, more mature, better exposed grapes in the vineyard, guided by a plant-by-plant screening and tasting procedure. The yield was about 9 tons per hectare. Vinification Spontaneous fermentation of the whole grapes (including skins) at ambient temperature for 18 days in steel tanks. Ageing 18 months in French oak and bottle aging for about 4 months. Frosts and low rainfall in spring, followed by a summer drought that accompanied grape ripening until late August. Winter rains allowed to get through the summer months without excessive drought stress. The good temperature range favored fruity aromas and concentration. Variety Sangiovese clones selected in old vineyards in Montalcino. Harvest Accurate selection of the more mature, better exposed grapes in the vineyard, guided by a plant by plant screening and tasting procedure. The yield was about 6.5 tons per hectare. Vinification Spontaneous fermentation of the whole grapes (including skins) at ambient temperature for 15 days in steel tanks; malolactic fermentation in wooden casks.
